This year we made Easter, or Resurrection, Cookies. I had seen the recipe last year, but it was too late in the season. The recipe is for meringues, but each ingredient represents something having to do with the resurrection story. For example, adding the vinegar teaches about Jesus asking for a drink on the cross and the soldiers giving him vinegar to drink. The cookies go into the stove, you tape the stove door shut, and the next morning you should have cookies that are hollow inside. We can rejoice, because the tomb that held Jesus' body was sealed, but hollow three days later.
The lesson that we learned was that while God can make a hollow tomb, I cannot make a hollow cookie.
I didn't beat the eggs nearly long enough to have stiff peaks. I was so bummed about the flop of a project that I did it again the next day. This time I had enormous cookies. I think they were too big. They still had meringue material inside.
Oh well. At least this batch was edible. The first batch had to be scraped off the cookie sheets. That was the morning I realized I had more dish soap.
While the recipe for the cookies made it into the trash I did run across a recipe online for Resurrection Rolls. I found them just in time to buy two ingredients and bake them in time for Easter Brunch with the in-laws. They were easy, yummy, and... drum roll please... HOLLOW! Let the angels sing! Okay, I'm over doing it. I look forward to making that recipe a family tradition.
