Once a Month Cooking

Thanks to the help of my mom and my faithful husband I have fourteen meals made and waiting to be consumed in my freezer. It's called Once a Month Cooking. I've done it once before, but while the book recommended shoppping on one day and cooking on the next I got excited and did it all on one day. That worked out fine, but it was stressful and messy. This time I asked for help from my wonderful mother. She watched the children on Friday while I went grocery shopping. I patiently waited until the next day to go all out and do the cooking. Brad was in charge of the children.
At first I kind of enjoyed it, because I listened to my iPod and zoned out while cooking 3 1/2 pounds of chicken, browing 2 pounds of ground beef, slicing onions, carrots, chopping green bell peppers, and so on. After an hour and a half of prepping for the meals I decided this was a pretty tedious adventure.
However, after six hours in the kitchen I now have fourteen home cooked meals in my freezer! These meals will last us all month thanks to frozen pizza, leftovers, and Taco Bell. This technique, if you can call it that, will save me time in the long run in planning for dinners, making dinners, shopping for food, and clean up. All I can say about the meals themselves is they better be darn good and save me a lot of time!

That's a great idea, I've heard of it before but always wondered how they would taste after being frozen.
